As we prepare to celebrate the winners of the 2025 UQ Entrepreneurship & Innovation (E&I) Awards on 20 August, we’re also on the lookout for the next big breakthrough.
That’s why applications for the 2025 Food Innovation Challenge are open now - closing 18 August. Whether you have an idea or just curiosity and drive, this is your chance to create change and follow in the footsteps of startups like All G Foods.
Transforming Dairy, Transforming the Future
All G Foods is a cutting-edge biotech startup on a mission to revolutionise dairy protein production through precision fermentation and plant-based innovation. Founded by Jan Pacas (CEO), they envision a future where dairy is made sustainably - without livestock or traditional farmland - reducing environmental impact while maintaining taste, nutrition, and functionality.

With a team of 25 scientists and eight commercial staff, and strong investment backing, All G Foods has scaled rapidly, collaborating with industry partners to lead Australia’s push into sustainable food manufacturing. You can read more about their launch in the US and China here.
Powering Innovation Through Partnership
A landmark $4 million, four-year collaboration with the Food and Beverage Accelerator (FaBA) at The University of Queensland (UQ), alongside access to UQ’s Australian Institute for Bioengineering and Nanotechnology (AIBN), has helped All G Foods bring its dairy protein technology from lab to market. Using bioreactor systems adapted from the beer brewing process, the team produces proteins like lactoferrin and casein—identical to their animal-derived counterparts but far more sustainable.
As Professor Esteban Marcellin from UQ / FaBA had previously explained to FaBa about this process:
“We followed the same process as the fermentation of beer but instead of making ethanol, we have produced dairy proteins. This approach opens the door to tailored nutrition and positions Australia at the forefront of food bio-manufacturing.”
An Entrepreneurship Success Story
All G Foods began their journey with support from UQ Ventures, which provided the founder development, industry connections, and community platform to grow. This journey culminated in being named FaBA Food & Beverage Startup of the Year at the E&I Awards - a recognition that propelled them to further success.
